Eighth Edition, May 2007


Welcome to the eighth edition of “In the Kitchen”.  Spring is everywhere and love is all around!  Life as we know it has begun again, no more scarves and hats and wool sweaters, out come the sandals and the gardening gloves and smell of fresh lilac trees and birds singing outside your window.  It’s the season of rejuvenation and to think about summer parties and wedding season!


Recipe of the Month
Jerk Seasoned Pork Chops with Minted Melon Salsa

¼ cup sugar 2 tbsp. dried thyme
2 tbsp. allspice 1 tbsp. ground black pepper
1 ½ tsp. salt 1 ½ tsp. ground red pepper
1 ½ tsp. nutmeg ¾ tsp ground cloves
4 butterfly pork chops 6-8 ounces each.

Combine all ingredients except pork.  Sprinkle half of mixture on pork in a Ziploc bag and let Rest in fridge for at least 30 minutes.  Place on a heated grill and cook until just slightly pink in the middle, about 7 minutes per side.

Serve with Salsa and Grilled Peppers and BBQ Baked Sweet Potato

Salsa Recipe

1 cup honeydew melon, chopped
1 cup cantaloupe, chopped
1 tbsp. fresh mint, chopped 
1 tbsp. liquid honey

Combine all ingredients, stir well and refrigerate until ready to use.  Remove pork from grill and place salsa on top and enjoy this hot and tasty summer dish.

 

Extra Bits and Bites:
I can save you time!!  As your summer gets rolling and the kids are out of school, things can get a little hectic and your time may be taken up by doing other fun things.  Such as going to the museum, taking the kids to the beach and watching them play soccer.  With your time taken up doing these family activities, you may not have time for preparing those nutritious meals that you prepared during the winter months when time wasn’t such at a premium.  No fear a freezer full of food prepared by me can save you time and money!
